Zero waste museli/granola recipe

So it’s criminally easy to make muesli/granola.  You can make it out of your favorite things (bought in bulk) and it’s much, much cheaper than store-bought.  Here’s my recipe….enjoy!

3 cups rolled oats

1/2 cup  wheat bran (or other bran)

1 1/2 cups nuts and seeds (I’ve used 1/2 cup pepitas, 3/4 cup pistachios & 1/4 cup pine nuts)

1 cup dried fruit (I’ve used dates)

2 tsp cinnamon (or to taste)

2 tbsp maple syrup (or other sweetener to taste)

Heat oven to 110C (225F).

Mix oats, bran, nuts and seeds then spread on two oven trays.  Bake for 30 mins – stirring once about halfway.

Meanwhile, chop dates and add to cinnamon in a large bowl.  Add hot oat/nut mix once baked and immediately add maple syrup (to taste) so that it gets soaked up by the hot oats.  Allow to cool fully before storing in an airtight container.

Delicious!  Enjoy with milk or yoghurt.

I’m not a big dried fruit fan so I usually stick with the dates – but some other winning combinations I’ve tried are:

  • Hazelnut and 3 seed mix
  • Walnut and pepitas
  • Almond and sunflower seeds

Get creative!
